How to Double a Recipe
Doubling a recipe means multiplying every ingredient by 2 — but a few things (pan size, baking time and strong seasonings) need extra care.

Step by step
- Multiply every ingredient amount by 2.
- Use a larger pan or two pans — don’t overcrowd. Doubling volume does not mean doubling pan area.
- Add seasonings, salt and spices gradually — start at 1.5× and taste before going to 2×.
- Keep oven temperature the same, but expect baking time to increase slightly. Check a few minutes early.
- For leaveners (baking soda/powder), 2× is usually fine, but very large batches can need a touch less.

Do you double the baking time when you double a recipe?
No. Oven temperature stays the same and time changes only a little. A thicker or larger pan adds a few minutes — start checking about 5 minutes early.
Should I double the salt and spices?
Double them cautiously. Start at about 1.5×, taste, then adjust. Strong spices and salt can become overpowering at exactly 2×.
